Bollamatta is a charmat method made with Sangiovese from the winery's most vocated vineyards, the same ones used for Testamatta and Colore. A green harvest for an immediate, fun and enjoyable wine, the result of great terroir and creativity. A brut rosé made exclusively with sangiovese grapes sourced from our most vocated vineyards, aged between 50 and 80 years, the same ones used for Testamatta and Colore. The green harvest is postponed so as to reach the perfect sugar concentration for sparkling.
